Been soup

Ingredients

Onion - 1.5 kg
Olive oil - q.b.
Green cabbage - 3 kg
Chorizo - 1 kg
Red beans - 3 kg (dry)
Potato 2 kg
Turnip - 2 kg
Carrot - 2 kg

Cooking steps

1. Previously soak the beans for 24 hours and cook them well.
1. Saute the onion.
2. When the onion is soft, add the garlic.
3. Add water.
4. Cut the chorizo in slices and put them in the oven.
6. Add the remaining ingredients as you chop them.
7. Blend 1/3 of the beans with the cooked water.
8. Add the bean cream to the soup.
9. Add the chorizo slices to the soup.

Lasagna

Meat

Ingredients

Onions - 0.350 kg
Garlic - 0.150 kg
Minced meat - 1.6 kg
Tomato Pulp - 0.8 kg
Tomato pieces - 1.2 kg
Carrots - 0.5 kg
Olive oil q.b.

Cooking steps

1. Sauté the meat in olive oil.
2. Add garlic.
3. Keep stirring so the meat doesn't stick to the bottom.
4. Add a splash of white wine and let the alcohol evaporate.
5. Add grated carrots.
6. Add the ntomato pulp and pieces.
7. Let it simmer for at least 20 minutes.

Lasagna

Bechamel

Ingredients

Butter - 0.250 kg
Flour - 0.250 kg
Milk - 1.25 L
Salt - q.b.
Nutmeg - q.b.

Cooking steps

1. Start by melting the butter in a pan.
2. Add the flour and stir immediately with a wire rod, letting it cook for a few seconds.
3. Add the milk little by little, stirring constantly to avoid lumps. Stir until thickened.
4. Let it cook for a few minutes, stirring occasionally.
5. When the béchamel sauce has the consistency you want, season with salt and pepper.
6. Let it cook for a few more seconds and it's done.

Apple crumble

Ingredients

APPLES
Apples - 7 kg
Frozen berries - 3 kg
Sugar - 3 tsp
Cinnamon qb.

CRUMBLE
Sugar - 1 kg
Butter - 750 g
Flour - 1 kg
Oat meal flour - 1 kg
Nuts - 1 kg

Cooking steps

CRUMBLE
1. Preheat the oven to 180 degrees.
2. In a bowl, mix all ingredients except nuts.
3. Blend roughly the nuts in a food processor.
4. Add nuts to the mix.
3. Grease 2 trays with butter and sprinkle with flour.
4. Place the crumble dough in the trays.
5. Cook for about 30 to 40 minutes stirring every 5-7 minutes.

APPLES
1. Cut apples in small chunks.
2. Add sugar and cinnamon
3. Add frozen berries.
4. Place them in a tray and into the oven for 20-30 minutes.

Bechamel

Ingredients

Vegetable Butter - 0.100 kg
Flour - 0.100 kg
Almond Milk - 1 L
Salt - q.b.
Nutmeg - q.b.

Cooking steps

1. Add vegetable milk, vegetable butter, plain flour, salt & pepper to taste to the Thermomix.
2. Cook for 8 minutes / 90C / speed 4.
